Smoked Pork Ribs Coated With a Sticky Rub

Ingredients

Rub:

5.5 pounds of pork ribs

5 pieces of star anise

1 tablespoon of mustard

1 tablespoon of cumin seeds, toasted and crushed

1 tablespoon of coriander seeds, toasted and crushed

1 tablespoon of mustard powder

1 tablespoon of garlic powder

2 tablespoons of sea salt

1/2 tablespoon of cracked pepper

1 tablespoon of smoked paprika

1 tablespoon of dried mixed herbs

1 tablespoon of brown sugar

1/2 teaspoon of cayenne pepper


Rib Glaze:

2 tablespoons of hoisin sauce

2 tablespoons of honey

4 tablespoons of tamari soy sauce

2 tablespoons of finely grated fresh ginger

3 cloves of garlic, finely grated

2 tablespoons of sesame seeds

1 red chili, seedless, finely diced


Directions:

For the Pork Ribs:

1. Cover the pork ribs and star anise in a large pot with water. Bring it to a boil, reduce the heat, and simmer for 20 minutes.
2. Light your Engel Fire and let it burn to embers, maintaining a temperature of around 392°F. Adjust the flue to be halfway open (you may need to open the door slightly if the temperature isn’t staying high).
3. Drain the ribs well, then brush them with Dijon mustard and sprinkle the dry rub over them until they are well coated.
4. Place the ribs onto the grill, lifting them to the highest setting, with the fire basket directly below. Close the doors and hot smoke for 40 minutes. If the ribs start to flare up, move the fire basket slightly away from the ribs.
5. Remove the ribs and cut them into individual ribs. Spoon over the hot glaze and arrange the ribs on a large serving dish, sprinkling over any excess rub.


Rub:

In a bowl, mix all the house rub ingredients. Store the rub in an airtight container.
Rib Glaze: Mix all the glaze ingredients in a bowl and stir well.
